Mushroom & Swiss Chicken Burgers






I thought I bought ground turkey breast, but I really bought ground chicken breast. I decided to make a burger with it. I have to admit, I was nervous, and before I grilled them, my husband looked concerned as well. But after throwing this all together, it was a hit and I will definitely be making this more often. The Shiitake Sesame Vinaigrette really made a huge difference in the flavor. It’s cheap, all natural and so good! Please try this recipe if you’re a burger lover! Enjoy!

1lb Ground Chicken breast
¼ cup chopped onion
½ cup chopped mushroom
2 tablespoons of Annie’s Naturals Shiitake Sesame Vinaigrette
½ tablespoon Lawry’s seasoning
Sliced low fat Swiss cheese
Turkey Bacon

Mix together ground chicken, onion mushroom, Shiitake Sesame Vinaigrette, and Lawry’s seasoning and form into burger. Grill until completely cooked and top with Swiss cheese and turkey bacon. I recommend not using many condiments because it will ruin the flavor of the burger.

Lime & Cilantro Salmon and Black Bean Salsa

Okay so I made the salmon recipe up and the black bean salsa I got from my mother in law, but of course I tweaked it a little. They are both so good, very easy to make, and very healthy. I really hope you try this if you like Salmon. Enjoy!

Lime & Cilantro Salmon

2 Salmon Fillets
2 Cloves roasted garlic
1 tablespoon olive oil
2 tablespoons cilantro
1 lime
salt & pepper

First put your salmon fillets in 9x13 baking dish. Squeeze fresh lime over salmon. Roast your garlic in tablespoon of olive oil. Mince garlic after roasted and put on top of salmon along with the olive oil you used to roast the garlic in. Chop up cilantro and sprinkle on top of salmon along with salt & pepper. Bake at 350 for 10-12 minutes.

Black Bean Salsa

1 can corn
1 can black beans
¼ onion chopped
1 lime
½ cup chopped cilantro
2 cloves roasted garlic
1 small avocado chopped into small pieces
salt to taste

Mix all ingredients together and refrigerate for about an hour. Eat with chips or as a salad.
